Christmas caramel Chex Mix
December 12, 2021
As long as I can remember, my mom has made Caramel Chex Mix for my family around Christmastime. It is one of my favorite desserts during the holiday season; the crunchy caramel Chex mixed with M&M’s is the best. I decided that this year I would make it for her instead, since she has been stressed about work lately.
Adding M&M’s is optional, add any chocolate candy you would like and enjoy!
Dry ingredients:
4 ½ cups of Rice Chex
4 ½ cups Corn Chex
1 cup packed brown sugar
¼ teaspoon baking soda
1 cup chocolate coated candy
Wet ingredients:
½ cup butter
¼ cup light corn syrup
Instructions:
Place cereals in a large microwavable bowl.
In a 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on high for about 2 minutes, stirring after 1 minute, until smooth and dissolved.
Stir baking soda in until dissolved, then pour over cereal, stirring until evenly coated.
Cool 5 minutes; stir in candies.
Spread on waxed paper to cool; break into bite-size pieces.
Store in an airtight container to eat later.
