Recipe: Salted brownie cookies

Back during lockdown, I really got into baking and this was one of the treats I would make with the help of my little sister Peyton, to spread some cheer during a hard time. I made these treats over the weekend, and brought some in for the staff, and they all loved it. This treat is super delicious and if you love brownies and cookies as much as I do, then this is the treat for you.

Ingredients you will need:

⅔ cup of flour

¼ cup of sugar

½ cup of light brown sugar

1 tsp of baking powder

½ cup chocolate chips, semisweet

2 tbsp of Cocoa Powder, unsweetened

¼ tsp of salt 

1 tsp of Vanilla extract

¼ cup of unsalted butter

2 eggs

Steps:

1: Preheat the oven to 350 degrees and line two baking sheets.

2: Whisk together flour, cocoa, baking powder, and salt in a medium bowl.

3: Place chopped chocolate and butter in a double boiler(or heat proof bowl) over a saucepan of gently simmering water. Slowly melt the chocolate, stirring constantly until smooth. Remove from heat and set aside to cool.

4: Combine eggs, sugars, and vanilla in a large mixing bowl with a whisk attachment and whisk together on medium speed for five minutes, then reduce speed to low and beat in melted chocolate for one minute. Add flour mixture and mix on low speed for twenty seconds until combined.

5:  Fold in chocolate chips.

6: Using a  cookie scoop, invert sccops just above baking sheets, spacing cookies three inches apart.

7: Bake for about 12-14 minutes or until the tops are shiny and cracky. Remove from the oven and sprinkle the tops with salt. Let cookies cool completely for ten minutes, transfer to a wire rack and enjoy!
